Healthy Fish Recipe: Grilled Yellowtail with Pineapple Salsa

Following up on last week’s post about National Fresh Fruit and Vegetables Month, I thought I’d share a delicious recipe I made this past weekend that included fruit and vegetables in it. Another big bonus, this can be cooked in 10 minutes (well, unless your chopping skills need a little work).

Alright, I’m not trying to brag, but the boys in my life kind of spoiled me this weekend and made this dinner happen. My brother happens to love fishing. I mean, he really loves fishing; more so than anyone I’ve ever met. So this weekend when he caught a fish almost the size of me and stopped by with more Ziplocs of fillets of yellowtail than most humans have ever seen, it was not a shock, but it was warmly welcomed.

My boyfriend, being the grill master that he is, gladly tossed it on the BBQ and made us a fresh, summery meal that had protein, veggies, and fruit. And most importantly, it was scrumptious! So here’s the recipe for you to enjoy too:

 Grilled Yellowtail with Pineapple Salsa

-fresh yellowtail fillets
-black pepper
-1 lime


-1 whole pineapple, diced
-1 red bell pepper, diced
-1 jalapeno pepper, diced
-1/4 cup cilantro, chopped

Season the yellowtail fillets with salt and pepper on both sides, place them on the grill on medium heat, and cook for 3 minutes on each side (more or less depending on thickness of fillets).  Squeeze a lime over the fillets while on the grill, once on each side.

Before grilling, or while someone else is doing the grilling, clean and cut the salsa ingredients, then toss them in a bowl until everything is evenly mixed.

Place grilled fish on a plate and top with the freshly made salsa and enjoy!
